A back-end developer builds the parts of a product users never see: the data model, the API, authentication and permissions, background jobs, integrations with other systems, and the behaviour of all of it under load. Day to day that means designing schemas, writing and documenting endpoints, running migrations safely, and making sure a query that is fine today is still fine at ten times the data.
Language fluency is the easiest thing to test and the least predictive. Screen for data modelling first: give a real feature and watch how they handle the awkward relationship. Then ask how they version an API and retire a field, how they would run a migration on live data and reverse it, where they put authorisation checks, and how they would find a slow query. Someone who reaches for an index, an explain plan and a rollback plan without prompting has done this in production.
